Jamaican Rum Chocolate Nut Pie
- 2 eggs, room temperature
- 1 cup sugar
- 1/2 cup all purpose flour
- 1/2 (1 stick) butter melted and cooled
- 1 cup chocolate chips semi sweet or mix of semi sweet and 60% cocoa
- 1 cup chopped pecans
- 1 Tbsp rum
- 1 tsp vanilla
- 1 9 inch unbaked pie shell, regular or graham cracker
- Vanilla ice cream
- Preheat oven to 350
- Beat eggs on high in small bowel until light and lemon colored. Gradually beat in sugar. Reduce speed to low, add flour and water and mix thoroughly.
- Stir in nuts, chips and flavorings.
- This may be done 1-2 hours before serving.
- Turn mixture into pie shell. Bake until golden brown - about 40 minutes
- Serve warm with ice cream
