Apple Tehina Cake

  1. Preheat the oven to 355 degrees F.
  2. Grease a round 9 inch pan with cooking spray and sprinkle lightly with flour
  3. In a large bowl, with an electronic mixer, mix the tehina and sugar.
  4. In a separate bowl, mix the flour, baking soda, cinnamon, walnuts, and diced apples.
  5. In another small bowl mix the orange juice and the vanilla.
  6. Add 1/2 of the flour mixture to the tehina mixture and stir.
  7. Add 1/2 of the orange juice mixture to the tehina mixture and stir until fully incorporated.
  8. Add the rest of the flour mixture and the rest of the orange juice mixture and stir again until evenly combined.
  9. Pour the batter into the cake pan and put in the oven.
  10. Bake between 45 minutes and an hour (periodically check after the 45 minute mark with a toothpick)
  11. Remove from the oven and let the cake cool in the pan.
  12. Run a knife around the edges and dust with powdered sugar if desired.
