Apple Tehina Cake
- 1 cup of Soom Foods Tehina
- 1 cup of sugar
- 1 teaspoon of vanilla
- 1 teaspoon of baking soda
- 1 1/2 cups of flour
- 2 teaspoons of ground cinnamon
- 1 cup of chopped walnuts
- 1 1/4 cup of apples; peeled and diced (about 2 small apples)
- 1 cup and 1 tablespoon of orange juice
- Powdered sugar for decorating (optional)
- Preheat the oven to 355 degrees F.
- Grease a round 9 inch pan with cooking spray and sprinkle lightly with flour
- In a large bowl, with an electronic mixer, mix the tehina and sugar.
- In a separate bowl, mix the flour, baking soda, cinnamon, walnuts, and diced apples.
- In another small bowl mix the orange juice and the vanilla.
- Add 1/2 of the flour mixture to the tehina mixture and stir.
- Add 1/2 of the orange juice mixture to the tehina mixture and stir until fully incorporated.
- Add the rest of the flour mixture and the rest of the orange juice mixture and stir again until evenly combined.
- Pour the batter into the cake pan and put in the oven.
- Bake between 45 minutes and an hour (periodically check after the 45 minute mark with a toothpick)
- Remove from the oven and let the cake cool in the pan.
- Run a knife around the edges and dust with powdered sugar if desired.
