Raspberry Cheesecake Bars
- 1.5 cups flour
- 3/4 tsp salt
- 2.5 T butter melted
- 1 cup packed brown sugar
- 1.5 tsp vanilla extract
- 3 eggs
- 1/2 cup granulated sugar
- 1/2 cup light sour cream
- 1 t lemon juice
- 1 8-oz package 1/3 less fat cream cheese
- cooking spray
- 15 cups fresh raspberries
- 1. preheat oven to 350 degrees
- 2.combine flour nad salt.
- 3. combine butter, brown sugar, 1 tsp vanilla and eggs.whisk. add flour mixture to butter mixture.
- 4. Place 1/4 ts vanilla, ganulated sugar and next 4 ingredients in bowl. beat with mixer until fluffy.
- 5.Line 13x9 baking pan with foil tht extends 1 inch beyond sides. spread half of batter in pan. Pour cream cheese misture in. sprinkle wiht berries. drop remaining batter by the spoonful over berries. Swirl batter, cream cheese and berries with a knife.
- 6. bake 35 minutes or until toothpick comes out clean. Cool on wire rack. remove by lifting foil. remove foil, cut into bars.
