Soft Chewy Chocolate Chip Cookies
- 4 cups all purpose flour
- 1 tsp. baking soda
- 1 tsp. salt
- 1/2 tsp. cinnamon
- 1 1/2 cup sweet, unsalted butter, melted and cooled a little bit
- 2 cups packed brown sugar
- 1 cup sugar
- 2 Tbs. vanilla extract
- 2 large eggs (room temp)
- 2 egg yolks (room temp)
- 2 cups semisweet large chocolate chucks
- 2 cups semisweet mini morsals
- or (for a variation)
- 2 cups mixed white & semi-sweet morsals
- Preheat oven to 325 degrees.
- Sift together flour, baking soda, salt and cinnamon; set aside.
- Cream together melted buter, brown sugar and white sugar until well blended. Beat in vanilla, eggs and yolks until light and creamy.
- Mix in dry ingredients until just blended. Stir in chips.
- NOTE: I then like to put the dough into the frig for an hour or so (or overnight). This seems to give the flavors a chance to meld together better.
- Baking: Drop by 1/4 cup (it makes large cookies) onto cookie sheets.
- Bake for 15 to 17 minutes in preheated 325 degree oven. Cool on baking sheets for a couple of minutes.
- DO NOT OVERCOOK!!!
