Red Pepper Coulis
- 2 tablespoons olive oil
- 1 medium white or yellow onion, finely chopped
- 3 cloves garlic, minced
- 4 medium red bell peppers, roasted, peeled, seeded, coarsely chopped
- 1-1/2 cups chicken stock
- 1 teaspoon paprika
- 2 teaspoons fresh oregano, finely chopped
- 1/4 teaspoon hot pepper sauce
- 1/4 teaspoon granulated sugar
- 1 teaspoon salt, or to taste
- 1 teaspoon freshly ground black pepper, or to taste
- Heat a large saute pan over medium-high heat and add the oil. Saute the unions until tender and translucent, about 4 minutes. Add the garlic and roasted bell pappers and saute 3 minutes more. Add the stock and bring to a boil. Reduce by half, then add paprika, oregano, hot pepper sauce, sugar, salt, and pepper. Cool slightly, then process in a blender until smooth.
- Strain if desired and reheat gently before serving.
