Flounder Paprika
- 2 pounds Flounder
- 1 16 ounce bag of Egg Noodles
- 1 Spanish or Yellow Onion
- 1 pound fresh Mushrooms Parsley
- 1 pintSour Cream
- Salt and Pepper, to taste
- 2 Tablespoons Paprika
- Parsley, for garnish
- Boil the egg noodles and place them on serving platter, covered, keeping them warm until fish is ready.
- Saute onions, mushrooms and paprika, being careful not to burn the paprika. When onions are translucent, remove half the mixture and set aside.
- Turn heat down and lay flounder fillets on top of onion mixture
- Cover and cook slowly until the flounder is cooked.
- Place flounder fillets over the noodles, keeping warm
- Return remaining onion mixture to skill. Add sour cream, salt and pepper.
- Simmer until the sauce is thoroughly blended, add more paprika, if necessary.
- Pour sauce over the fish and noodles.
- Garnish with chopped parsley
