Tante Juhree'S Apple-Walnut Chicken Salad
- 4 Cups bite-size pieces cooked chicken
- 2 teaspoons chopped scallions
- 1/2 Cup sliced celery
- 1 Cup diced unpeeled red apple
- 1/2 Cup chopped walnuts
- 2/3 Cup mayonnaise
- 4 Tablespoons heavy cream
- 2 Tablespoons vinegar
- 1/8 teaspoon freshly ground pepper
- Salt to taste
- 4 large tomatoes
- 1 washed lettuce leaf, dried for each serving
- Put chicken in a bowl and add the scallions, celery, apples and walnuts. Combine the mayonnaise, cream, and vinegar and blend well. Add pepper, salt, and toss with chicken, until well mixed. Hollow out the tomatoes and stuff them with the chicken salad. This adds to the presentation of the dish and makes it easier to eat!
