Plum Pudding
- 3/4 c. raisins
- 3/4 c. golden raisins
- 1/2 c. chopped candied cherries
- 1 Granny Smith apple, peeled and grated
- 2 Tbsp. grated lemon peel
- 1/2 c. orange juice
- 1/2 c. brandy or orange juice
- 1 c. flour
- 1 c. fresh white bread crumbs
- 1 c. light brown sugar
- 1 tsp. baking powder
- 1 tsp. allspice
- 1/2 tsp. salt
- 1/4 c. molasses
- 3 eggs, beaten
- slivered almonds
- whipped cream
- Coat 6-cup mold with cooking spray.
- Combine raisins, cherries, apple, lemon peel, juice and brandy.
- Let stand 1 hour. Add rest of cake mixture to the fruit mixture.
- Pour into mold and set mold pan in large saucepot.
- Add boiling water to halfway up side of mold pan.
- Cover and steam 4 hours.
