Salsa Sweet Potato Salad
- 4 medium-large orange flesh sweet potatoes (sometimes called "yams")
- 1 16 ounce jar salsa (mild, medium, or hot)
- 1 tablespoon chopped cilantro or Italian parsley
- 1. Scrub sweet potatoes and pierce each several times with the tip of a paring knife.
- 2. Cook the sweet potatoes either in the microwave (approximately 2 minutes on "hi" for each potato, depending upon the microwave's wattage) or by baking in the oven for approximately 30 minutes (for all the potatoes together) at 350 F. In either case, the sweet potatoes should pierce easily with a knife, but not be too soft.
- 3. Cool the sweet potatoes to room temperature, peel and cut into 1 inch chunks.
- 4. Place the sweet potato chunks in a bowl and add 1 cup of the salsa. ( This can be done the morning before serving).
- 5. At serving time , add another cup of salsa and the chopped cilantro or parsley.
