White Chocolate Cranberry Biscotti
- 1/2 cup butter (no substitutes) softened
- 1 c sugar
- 4 eggs
- 1 tsp vanilla
- 3 c all purpose flour
- 1 tbl baking powder
- 3/4 c dried cranberries
- 3/4 c white vanilla chips
- In a mixing bowl, cream butter & sugar. Add eggs, one at a time, beating well after each. Beat in vanilla. Combine flour & baking powder; gradually add to creamed mixture. Stir in cranberries & vanilla chips. Divide dough into 3 portions.
- On ungreased baking sheets, shape each portion into a 10 inch x 2 inch rectangle. Bake at 350 degrees for 20-25 minutes or until lightly browned. Cool for 5 min.
- Transfer to cutting board, cut diagonally with a serated knife ( I like electric) into 1 inch slices. Place cut side down on ungreased baking sheets. Bake 15-20 min. or until golden brown. Remove to wire racks & cool. Store in airtight container.
