Cheesy Mustard Cauliflower

  1. Trim
  2. leaves
  3. from
  4. cauliflower.
  5. Leaving
  6. head
  7. whole, remove as
  8. much
  9. of core as possible by cutting a cone shaped piece from bottom of head.
  10. Combine water and salt in 4-quart Dutch oven.
  11. Cook
  12. over
  13. high heat until water boils, about 4 minutes. Place
  14. cauliflower in boiling water, stem side down. Cook
  15. until water boils again, about 1 minute.
  16. Reduce heat to low and cook, uncovered, 5 minutes.
  17. Cover and simmer 10 to 15 minutes
  18. more or until cauliflower is tender.
  19. Drain in colander.
  20. Return cauliflower
  21. to Dutch oven.
  22. Combine mayonnaise, onion,
  23. mustard and
  24. cheese
  25. in
  26. bowl;
  27. mix to blend.
  28. Spread mayonnaise
  29. mixture over cauliflower.
  30. Cook, covered, over low heat 5 minutes or until cheese melts.
  31. Transfer cauliflower to serving
  32. platter,
  33. using two
  34. pancake turners.
  35. Sprinkle with paprika.
  36. Makes 4 servings.
