Fried Dumplins' And Greens

  1. for dumplings
  2. Mix dry stuff then add enough water to make a nice
  3. soft dough. I mix it by hand right in the bowl. Form
  4. a long tube with dough and break pieces off about the
  5. size of a biscuit. Form into little round pieces (see
  6. picture).
  7. Fry in med. olive oil. Fry them SLOW so cornmeal has
  8. enough time to "soak". Turn when LIGHT brown, then
  9. turn again to brown sides, keep turning until they are
  10. light brown all over. They take a long time to be
  11. perfect. So don't rush and fry them too fast.
  12. for greens
  13. Do this while the dumplins are cooking.
  14. In large sauce pan put enough olive oil to cover the
  15. bottom. Heat on med. heat add:
  16. 1 small onion
  17. 2-3 garlic cloves
  18. 1 small tomato, slices very thin
  19. sweet pepper (as much as you like)
  20. saute for 2-3 minutes
  21. Turn off heat and add
  22. shredded cabbage, calalloo, spinach, collard greens,
  23. mustard greens or any other you like. You can just
  24. use one or mix them. Remember as it cooks it shrinks.
  25. I like to add a shredded carrot on top. Cover, let
  26. steam in own juice for a couple minutes then add a
  27. slice of habenero pepper and stir to mix everything
  28. together, I use the scotch bonnet pepper sauce that I
  29. make in Jamaica. Remember only make it as hot as you
  30. like. We made this one (pictures) so hot it burned my
  31. mouth BAD.
  32. Sometimes I put some peanut butter in the greens at
  33. the end and stir it around. Love to slather peanut
  34. butter on the dumplins then pile on the vegys.
