Chocolate Fudge Cake
- 3 squares unsweetened chocolate
- 2 1/4 cups sifted cake flour
- 2 teaspoons baking soda
- 1/2 teaspoon salt
- 1/2 cup butter
- 1 pound box light brown sugar
- 3 eggs
- 1 1/2 teaspoons vanilla
- 1 cup sour cream
- 1 cup boiling water
- Melt chocolate.
- Let cool while proceeding with preparations.
- Grease and flour two 9x1 1/2 inch cake pans.
- Sift together flour, soda, and salt.
- Beat butter until soft in a bowl that will hold at least 4 quarts.
- Add brown sugar and eggs.
- Beat with mixer at high speed until light and fluffy (about 5 minutes).
- Beat in vanilla and melted chocolate.
- Stir in dry ingredients alternately with sour cream.
- Beat well by hand after each addition.
- Stir in boiling water - batter will be thin.
- Pour into pans.
- Bake at 350 for 35 minutes.
- Cool in pans on wire rack 10 minutes.
- Turn out onto wire racks to cool completely.
- Frost.
