Lane Cake
- 8 egg whites
- 1/2 c. sugar
- 1 c. butter
- 1 1/2 c. sugar
- 3 1/2 c. self-rising flour
- 1 c. milk
- 1 tsp. vanilla extract
- Grape Filling
- Seven Minute Icing
- Beat egg whites until foamy.
- Gradually add 1/2 cup sugar, beating constantly until stiff peaks form.
- Set aside.
- Cream butter and 1 1/2 cups sugar until light and fluffy.
- Add flour alternately with milk, beginning and ending with flour.
- Beat well after each addition.
- Fold in beaten egg whites and vanilla.
- Turn into four greased and paper-lined pans (8-inch).
- Bake in preheated 350u0b0 oven for 25 to 30 minutes.
- Cool 10 minutes before removing from pans.
- Cool completely on wire racks.
- Place one cake layer on serving plate, spread with 1/3 of cooled Grape Filling.
- Top with second layer, spread with 1/3 Grape Filling.
- Repeat.
- Spread Seven Minute Icing over top and sides.
