Perfect Poached Pears
- 6 bosc pears or similar, hard pears (bartlett works well)
- 1 1/4 cup sugar
- 4 cups (1 quart) water
- 6-8 peices lemon zest removed with a vegatable peeler in 2 inch strips
- 4-6 pieces fresh peeled ginger
- First, peel the pears with a vegetable peeler and remove the cores. Bring water, 3/4 of a cup of the sugar, ginger and the lemon to a boil, making sure not to let the sugar burn. Lower heat and add pears.
- Let cook 20-30 minutes. The cooking time depends on the pear type. The pears are ready when they are close to translucent.
- Remove the pears from the water and place in bowls.Add remainder of sugar to leftover cooking juice, heat and stir, about 5-6 minutes so sugar disolves and a syrup of sorts is left. Spoon sauce over pears and add lemon rind to each bowl, because in the sugar the lemon will have preserved. Serve imedietly.
