Sweet Potato Casserole With Caramelized Apples
- 4 large sweet potato (or one super large can cooked)
- 2 Tblsp salted butter
- 2 Tblsp olive oil
- 2 Tblsp heavy cream (i screwed up and did 2 cups!)
- 1/2 cup applesauce
- 2 tsps grated fresh ginger
- 1 tsp lemon zest
- 1 tsp sea salt
- 1 tsp freshly ground black pepper
- 2 honey crisp or fuji apples, peeled, cored and sliced (could double this for better topping)
- 3 Tblsp light brown sugar
- preheat oven to 400 degrees
- grease 4 qt baking dish
- prick potatoes and wrap each on in foil; place on baking sheet and bake for one hr.
- turn off oven and let potatoes sit for 30 min
- remove from oven and cool for 30 min
- peel potatoes and scoop flesh into large bowl
- Add 1 Tblsp butter, 1 Tblsp olive oil and cream
- Beat w/mixer on medium high for 2 min til smooth
- mix in applesauce, giner, lemon zest, salt and pepper
- In bowl, combine apples and brown sugar.
- On med-high heat, melt 1 T butter and 1 T olive oil. add apples and saute, stirring occassionally, until caramelized and golden brown, about 15 min.
- top the sweet potatoes with apples.
- Bake 10-15 min til warmed thru.
