Corn Bread
- 1 1/4 c. yellow cornmeal
- 3/4 c. all-purpose flour
- 1/4 c. granulated sugar
- 4 tsp. baking powder
- 1/2 tsp. salt
- 2 large eggs, lightly beaten
- 1 1/4 c. milk
- 1/2 c. vegetable oil
- 2 c. flour
- 1 c. sugar
- 1 1/2 tsp. baking powder
- 2 tsp. cinnamon
- 1/2 tsp. salt
- 1/2 tsp. baking soda
- 1 c. chopped walnuts (may use raisins or dates or both, if desired)
- 1 large box vanilla instant pudding
- Combine with the wet mixture and mix together well.
- Pour into two large greased loaf pans. Sprinkle with cinnamon and sugar. Bake at 325u0b0 for 1 hour.
- Remove from pans and place on wire rack to cool.
- May be served warm or cold.
- Stores well in freezer.
