Greek Salad Bites
- 4 oz crumbled feta cheese
- 1/2 cup sour cream
- 1/4 cup snipped fresh parsley
- 2 T oil-packed dried tomatoes, drained and finely chopped
- 2 cloves garlic
- 1/2 t cracked black pepper
- 1 1/2 medium cucumbers
- 1/4 cup finely shredded fresh basil
- 1/4 cup chopped pitted kalamata olives
- In a small bowl stir together feta cheese, sour cream, parsley, tomatoes, garlic and pepper. Cover and chill for 2-24 hours.
- Using a sharp knife, trim the ends from the cucumbers; discard ends. Bias slice the cucumbers into 1/4 inche thick slices. Spoon 1 1/2 T cheese mixture onto each cucumber slice. Arrange cucumber slices on a serving platter.
- In a small bowl combine olives and basil. Spoon some of the mixture over each cucumber slice. Serve immediately.
