Mum'S Apple Crunch
- Filling
- 3 pounds (about 8) McIntosh apples
- 3/4 cup plus 1 tablespoon sugar
- 2 tablespoons all-purpose flour
- 1 teaspoon cinnamon
- 1/4 teaspoon freshly grated nutmeg
- 1/4 teaspoon salt
- 1 tablespoon fresh lemon juice
- 2 tablespoons cold unsalted butter, cut into bits
- milk for brushing the crust
- Crunch
- Dry ingredients--mix the following
- 1.5 cups rolled oats
- 1/2 cup w.w. pastry flour (lately I substitute brown rice flour)
- 1/2 cup almonds (slivered or chopped)
- 1/2 cup walnuts (chopped)
- (you can substitute other nuts, if you prefer)
- 1/4 teaspoon salt
- 1/2 teaspoon ground cinnamon
- Wet ingredients--whisk together until smooth
- 1/3 cup oil (canola or grape seed)
- 1/3 cup pure maple syrup
- 1 teaspoon vanilla extract (optional)
- Thoroughly coat dry ingredients with wet; place on greased cookie sheet and bake @ 350 degrees for about 45 minutes,
- stirring every 10 minutes...remove from oven when golden colored...cool.
