Spicy Beef Chili
- 4-5 pieces of bacon
- 1 lb lean ground sirloin
- Seasoning mix:
- 2 tbsp chili powder
- 1 tbsp cumin
- 1 tbsp paprika
- 1 tsp granulated garlic
- 1 bell pepper, diced
- 2 jalapeno peppers, diced
- 1 habanero pepper, diced
- 15 oz. can kidney beans, rinsed (or black beans, rinsed)
- 2 - 15 oz. cans tomato sauce
- 15 oz. can diced tomatoes
- 12 oz. bottle of dark beer
- Sprinkle of seasoning salt (or Penzeys "4S")
- Cayenne pepper to taste
- Black pepper to taste (or McCormick "Hot Shot")
- Pinch of dried oregano
- Pinch of red pepper flakes
- Optional toppings:
- 1 white onion, chopped
- Pickled jalapeno pepper rings
- Shredded cheddar cheese
- Oyster crackers
- Sour cream
- Brown 4-5 pieces of bacon. Drain fat, chop coarsely, set aside.
- Brown 1# ground sirloin in stock pot. Drain fat.
- Add bacon, seasoning mix, bell pepper, jalapeno peppers, habanero pepper, beans, tomato sauce, diced tomatoes, beer. Mix together.
- Sprinkle seasoning salt, add cayenne pepper, black pepper, pinch of dried oregano, pinch of red pepper flakes.
- Mix and bring to boil.
- Reduce heat, simmer for one hour, stirring occasionally.
- Add desired toppings and serve with cold beer.
