Bob'S Summer Salad
- 1/2 ( 11 oz.) can mandarin oranges
- 1/2 ( 8 oz. ) can pineapple bits
- 1/2 ( 16 oz. ) can garbanzo beans
- 6 baby carroys slices
- 3-4 green onions chopped
- 1 teaspoon poppy seeds
- 1/4 cup sugar
- 2 scant tablespoons vinegar
- 3 tablespoons olive oil
- salt and peeper to taste
- 3 qt.s fresh mixed lettuce greens
- 2 four oz. chicken breast or salmon steaks
- Prepare chicken/salmon by grilling or frying ( I like cajun or rosemary grilled). While this is cooking drain juice from fruit into a sauce pan (use 1/2 of each can). Add sugar and bring to a boil, reduce heat and simmer 5 min.Cool in refrigerator, add vinegar and oil and fruit, poopy seeds and salt and pepper and veggies. Let stand to blend flavors ( over night is best ).Divide lettuce into 2 qt. bowls and top with fruit/veggie mixture. Top off with chicken/salmon and enjoy.
