Bob'S Summer Salad

  1. Prepare chicken/salmon by grilling or frying ( I like cajun or rosemary grilled). While this is cooking drain juice from fruit into a sauce pan (use 1/2 of each can). Add sugar and bring to a boil, reduce heat and simmer 5 min.Cool in refrigerator, add vinegar and oil and fruit, poopy seeds and salt and pepper and veggies. Let stand to blend flavors ( over night is best ).Divide lettuce into 2 qt. bowls and top with fruit/veggie mixture. Top off with chicken/salmon and enjoy.
