Blue Ribbon Salmon In Horseradish Crust
- Four 6 oz. salmon filets
- 1 c. white wine or vermouth
- CRUST
- 6 T. butter at room temperature, room temperature
- 1/2 c. grated white horseradish (squeezed dry)
- 1 T. sesame seeds
- 1 T. garlic powder
- 1 t. salt
- 1/4-1/2 t. fresh, grated ginger
- 1/4-1/2 t. wasabi powder
- 1/4-1/2 t. dijon mustard
- 1/2 c. gluten free rice crackers, ground coarsely into crumbs in a food processor (Diamond Almond Rice Crackers are recommended)
- 2 T. fresh lemon juice
- Preheat oven to 400 degrees.
- 1. Combine crust ingredients in a food processor and pulse until mixture forms a ball.
- 2. Line a baking sheet with aluminum foil and spray with non-stick spray. Place fish on the baking sheet, and pour wine over fish. Lightly salt filets.
- 3. Using fingers, spread crust mixture thickly over filets.
- 4. Bake at 400 degrees for 13-18 minutes depending on thickness.
- 5. Turn on broiler. Broil for 2-4 minutes or until crust is golden brown
