Cinnamon Tortilla Chips And Strawberry Salsa
- 8 plain flour tortillas
- 1 1/2 cups of fresh strawberries
- 2 nectarines or apples
- Juice of 1/2 a lemon
- Cinnamon sugar
- 2 tbsp honey
- 1/4 tsp cinnamon
- 1/4 cup fresh mint, chopped
- Salsa:
- Dice fruits and mix together in a bowl. Add cinnamon, mint, lemon juice and honey and mix together. Store in the fridge in an airtight container for at least a couple of hours, or overnight to allow flavours to blend.
- Tortilla Chips:
- Preheat oven to 425 degrees. Lightly brush tortillas with water. Sprinkle tortillas with cinnamon sugar. Cut into chip-sized wedges. Bake on a non-stick baking sheet for 5-7 minutes, or until golden. Allow to cool before serving.
