Pumpkin Butterscotch Cookies
- 2 1/2 cups flour
- 1 tsp baking powder
- 1 tsp baking soda
- 2 tsp cinnamon
- 1/2 tsp allspice
- 1/2 tsp ground cloves
- 1/2 tsp nutmeg
- 1/2 tsp salt
- 1/2 cup butter, softened
- 1 1/2 cup sugar or 3/4 cup SPLENDA Sugar Blend for Baking
- 1 cup canned pumpkin
- 1 egg
- 1 tsp vanilla extract
- 1 3/4 cup butterscotch morsels
- Preheat oven to 350 degrees.
- Combine flour, baking powder, baking soda, cinnamon, allspice, cloves, nutmeg and salt.
- Cream together butter and sugar; add pumpkin, egg and vanilla; beat until creamy.
- Mix in dry ingredients, then stir in butterscotch morsels.
- Drop on cookie sheets in tablespoons; bake 15-20 minutes.
