Northcoast Olive Relish
- 1 1/4 cups of Green Pearl Manzanilla Olives, Pimento Stuffed,drained
- 1 1/2 cups of medium size pitted black olives, drained
- 1 3/4 cups of three bean salad,drained
- 7 1/2 ounces of roasted red bell peppers
- 1 tablespoon of dried italian seasoning
- 3 tablespoons of extra virgin olive oil
- Juice of 1/2 of a lime
- In a food processor using the S blade attachment, place the green pearl and black olives, three bean salad, red bell peppers, italian seasoning and olive oil. Squeeze the lime juice in last. Pulse 10 to 12 times until relish looks like coarse coleslaw. Empty into a bowl or container. This recipe makes 3 1/2 cups. Refrigerate for freshnes. Allow to come to room temperature before serving to help bring out the flavors.
