Gambler'S Chili
- Spice Mix:
- 1 T minced garlic
- 2 1/2 T chicken base
- 1 tsp celery salt
- 1 T flour
- 2 tsp dried oregano
- 1 T cumin
- 1 T dried cilantro or 1/4 cup finely chopped fresh
- 1 T green chile powder
- Meat:
- 2 T canola oil
- 2 lbs pork tenderloin, cut into small cubes
- 1 cup chopped onion
- 1 3/4 cups chicken broth
- 10 oz canned green chile salsa
- 20 oz canned whole green chiles
- dash tabasco green pepper sauce
- salt
- In a small bowl, combine spice mix ingredients. Reserve for later use
- In a large pot over medium high heat, warm oil, and then add pork. When finished, drain juices and oil from pan. Add onion and chicken broth to pot, and simmer over medium heat for 1 hour, stirring often to prevent stickin.g. Add reserved spice mix and salsa, and simmer for 1 hour. Add green chiles, tabasco and salt to taste. Continue simmering for 1 more hour, then serve.
