Simple Pumpkin-Sherry Soup
- 2 tbsp olive oil
- 1/4 cup diced onion
- 2 cloves diced garlic
- 2 tsp thyme
- 1 can pumpkin (about 2 cups)
- 1 cup sherry
- 3-4 cups chicken broth (or vegetable broth)
- Salt and pepper to taste
- Optional:
- 1/2 teaspoon cinnamon
- 1/2 teaspoon cumin
- 1/4 teaspoon nutmeg
- 1/8 teaspoon cloves
- 1/4 teaspoon curry
- 1 cup fresh basil leaves, plus a few for garnish
- Sour cream
- Heat the olive oil in a large pot and saute the garlic, onion and thyme. (You can also add any additional spices from the above list that you might want.) Stir in the pumpkin and sherry, and cook for about 5 minutes while stirring over a medium heat. Let this simmer for about 10 minutes, then serve. Garnish with extra basil leaves and sour cream.
