White Fruit Cake
- 5 large eggs
- 1/2 lb. butter
- 1 c. sugar
- 1 3/4 c. all-purpose flour
- 1/2 tsp. baking powder
- 3/4 lb. candied cherries
- 1 lb. candied pineapple
- 4 c. shelled pecans
- 1/2 oz. vanilla extract
- 1/2 oz. lemon extract
- 1 small pkg. almond slices
- 1/2 c. raisins
- Cream butter and sugar until fluffy.
- Add well beaten eggs and blend well.
- Chop nuts and fruit in medium size pieces.
- Mix with some flour.
- Sift remaining flour and baking powder together and fold into the butter and egg mixture.
- Add flavorings; mix well. Add fruit and nuts; mix well.
- Pour into greased, paper lined tube pan.
- Place in cold oven and bake at 250u0b0 for 3 hours.
- Cool in pan on rack.
