Egg Sandwich With Green Bean Slaw
- 1/2 cup crumbled feta
- 3 tablespoons fresh lemon juice
- 2 tablespoons olive oil
- Kosher salt
- Freshly ground black pepper
- 1/4 thinly sliced red onion
- 2 thinly sliced radishes
- 1/2 pound green beans (shaved with a peeler)
- 1/4 cup chopped Kalamata olives
- 8 slices bread
- 4 sliced hard-boiled eggs
- Whisk 1/2 cup crumbled feta, 3 tablespoons fresh lemon juice, and 2 tablespoons olive oil; season with kosher salt and freshly ground black pepper. Toss with 1/4 thinly sliced red onion, 2 thinly sliced radishes, 1/2 pound green beans (shaved with a peeler), and 1/4 cup chopped Kalamata olives. Build 4 sandwiches with 8 slices bread, 4 sliced hard-boiled eggs, and slaw.
