Summer Vegetable Pasta

  1. First cook pasta directed. While cooking pasta chop garlic, slice mushrooms, and break broccoli heads on chopping block. Break up prosciutto into skillet and add wine. Add vegs. and cook for 3 min. over med/high stove. Remove from heat.
  2. Drain pasta reserving ~ 1 TB of pasta water in pan. Add cheese and dressing to pasta in the same pan and stir.
  3. Now add vegetables to pan and stir again. Plate with a few shredded carrots and cheese on top.
