Summer Vegetable Pasta
- 4 oz. Whole wheat spaghetti
- 2 oz. Prosciutto
- 4 oz. or 1/2 package of Trader Joes baby broccoli (just the heads)
- 1/2 package of white mushrooms
- 2 large cloves of fresh garlic
- 1/4 cup grated carrots
- 1/4 cup of white wine
- 1/4 cup of Parmesan & Romano grated cheese
- 1 & 1/2 TB of Trader Joes Greek Style Feta Dressing
- First cook pasta directed. While cooking pasta chop garlic, slice mushrooms, and break broccoli heads on chopping block. Break up prosciutto into skillet and add wine. Add vegs. and cook for 3 min. over med/high stove. Remove from heat.
- Drain pasta reserving ~ 1 TB of pasta water in pan. Add cheese and dressing to pasta in the same pan and stir.
- Now add vegetables to pan and stir again. Plate with a few shredded carrots and cheese on top.
