Golden Cream Of Wheat

  1. First prepare squash:
  2. Place frozen block of squash in pot with 1 Tbsp of butter on low heat and cover until squash begins to thaw and is fluid. Raise to medium heat and whisk in 1/4 can of evaporated milk, egg, 2 Tbsp brown sugar, pinch of salt, pinch of ground cinnamon, clove, and nutmeg to taste. Continue to heat and whisk until thick and bubbling, about 2-3 minutes. Remove from heat and set aside.
  3. Cream of wheat:
  4. Place farina in bowl and add cold water just to cover cereal (it will be absorbed) In a sauce pan add remaining evaporated milk, butter, vanilla extract, sugar, and cinnamon stick(s) and heat on medium until just before boiling (do not boil). In a separate bowl, add hot water to raisins and let sit to plump. Once milk mixture is ready, add farina with water to pot and stir well. Whisk in half of the squash, drain and add raisins. Pour into serving bowl while warm and serve.
