Presto Pesto Pasta With Shrimp
- large onion, halved, sliced thinly
- 1 lb. fresh/frozen shrimp
- 1/2 sweet red pepper
- 1/4 cup pesto
- 2 carrots coarsely shredded
- 3 T Bertolli extra virgin olive oil
- 3 thin slices proscuitto, diced
- 1/4 cup freshly grated parmesan cheese
- 1/2 lb. of your favorite pasta, cooked and drained
- IN skillet, heat Bertolli Olive Oil, add sliced onion, red pepper and carrots saute until onions are translucent. Remove veggies from skillet. Add shrimp to oil left in skillet and quickly saute until they begin to turn pink. Remove shrimp, add to veggies. Place pesto in hot skillett, add drained pasta and toss/stir. Add veggies and shrimp and stir until al ingredients are warmed through. Transfer to pasta bow, sprinkle procsuitto and freshly grated parmesan cheese and serve.
