Jamaican Coconut Bread
- 3 cups flour
- 3/4 cup sugar
- 4 tsp baking powder
- 1 tsp salt
- 1/2 tsp cinnamon powder
- 1/8 tsp nutmeg
- 1 1/3 cups grated coconut
- 1 1/2 cup coconut milk
- 1 egg, beaten
- 2 tbsp vegetable oil
- 1 tsp vanilla extract
- 2 tbsp sugar
- Preheat oven to 350 degrees
- Combine all dry ingredients with the grated coconut in a large bowl.
- Combine the coconut milk, egg, vegetable oil and vanilla extract, blend well.
- Combine both the liquid ingredients with the dry, mix well.
- Pour batter into two 9x5x3 loaf pans.
- Optional: With the remaining grated coconut combine with 2 tbsp sugar and sprinkle over the batter and bake.
- Bake time approximately 1 hour or until cooked through.
