Baca Bread

  1. Dissolve sugar in 2/3 cup warm water. Add yeast and stir.
  2. Add couscous and oatmeal to 2 1/3 cup cold water in saucepan. Bring to a boil and remove from heat.
  3. Mix 3 1/3 cup cold water, oil, honey and salt in a large mixing bowl. Add the yeast mixture and the oatmeal/couscous mixture. Add the flour and mix thoroughly.
  4. If your bowl is large enough, knead in the bowl (if not, turn mixture out onto a well-floured work surface) for about 10 minutes, or until the dough is smooth and elastic (add more flour as necessary).
  5. Let rise, covered, in the bowl for 45 minutes.
  6. Form into five loaves and place in greased loaf pans. Let rise, covered, for 45 minutes.
  7. Preheat oven to 375u0b0.
  8. Bake loaves for 12 minutes, then turn the temperature down to 360u0b0 and finish baking for 20-25 minutes.
  9. Let cool for a few minutes, then remove loaves from pans to complete cooling.
