Baca Bread
- 4 1/2 teaspoons yeast
- 2/3 cup warm water
- 1 teaspoon sugar
- 2 1/3 cup water
- 3/4 cup couscous
- 3/4 cup oatmeal
- 3 1/3 cup water
- 1 1/2 cup oil
- 1 1/2 cup honey
- 3 tablespoons salt
- 6 1/2 cup whole wheat flour
- 8 cups white flour
- Dissolve sugar in 2/3 cup warm water. Add yeast and stir.
- Add couscous and oatmeal to 2 1/3 cup cold water in saucepan. Bring to a boil and remove from heat.
- Mix 3 1/3 cup cold water, oil, honey and salt in a large mixing bowl. Add the yeast mixture and the oatmeal/couscous mixture. Add the flour and mix thoroughly.
- If your bowl is large enough, knead in the bowl (if not, turn mixture out onto a well-floured work surface) for about 10 minutes, or until the dough is smooth and elastic (add more flour as necessary).
- Let rise, covered, in the bowl for 45 minutes.
- Form into five loaves and place in greased loaf pans. Let rise, covered, for 45 minutes.
- Preheat oven to 375u0b0.
- Bake loaves for 12 minutes, then turn the temperature down to 360u0b0 and finish baking for 20-25 minutes.
- Let cool for a few minutes, then remove loaves from pans to complete cooling.
