Beef, Bacon & Blue Burger With Spicy Walnut Mayo
- 1+1/2 pounds lean ground chuck beef
- 1/2 teaspoon Kosher salt
- 1/4 teaspoon cayenne pepper
- 12 slices ready cooked bacon, chopped
- 3/4 cup blue cheese, crumbled
- Spicy Walnut Mayo*
- 1 medium red onion, sliced very thin
- 6 bulky knot rolls, lightly buttered
- 1 large Granny Smith Apple, cored, peeled,thinly sliced
- 1 cup shredded iceberg lettuce
- In a medium bowl, mix beef, salt, pepper, bacon and 1/2 cup of the Blue cheese together and form into 6 -1/4 pound patties. Grill turning until cooked through. While grilling beef, prepare the mayo. Lightly grill sliced bulky rolls until lightly toasted on the inside. Place burger on toasted bun, top with nutty mayo, thinly sliced red onions, slices of apple and then shredded lettuce. Remaining crumbled Blue Cheese for garnish.
- *Spicy Walnut Mayonnaise
- 1/2 cup walnuts, finely diced
- 1 teaspoon Tabasco sauce
- 1 cup mayonnaise
- In small bowl combine all mayonnaise ingredients until well combined.
