Black Bean Cactus Burgers

  1. Prepare the nopales leaf according to the Technique for Preparing Nopales
  2. Dice the first five ingredients. If you prefer a less spicy burger, discard the jalapeno seeds. Set the diced vegetables aside in a medium bowl.
  3. In a seperate large bowl, empty the can of black beans. Mash with a fork until the beans form a thick paste. Drain the corn and add to the beans, along with the diced vegetables, egg yolks and lime juice, mixing thoroughly.
  4. In a food processor, reduce the bread to fine crumbs. Add gradually to the bean mixture, stirring thoroughly, until it starts to form solid clumps.
  5. Form the mixture into patties three to four inches in diameter, squeezing tightly.
  6. Cook thoroughly on a sheet of tin foil on a grill, or pan fry in a large greased skillet over medium high heat. Cook 8-10 minutes, turning once during cooking.
  7. Serve on hamburger or kaiser rolls, garnished with fresh tomato and avocado slices.
