Black Bean Cactus Burgers
- 1 small nopales leafu0b0
- 1 jalapeno pepper
- 1 medium tomato
- 3 chipotle peppers
- 1 small onion
- One 16 ounce can black beans
- One 8 ounce can corn kernels
- 1/2 cup chopped fresh cilantro
- Juice of one lime
- 2 egg yolks
- 4-6 slices dark wheat bread
- Garnish: Fresh tomato and avocado

- Prepare the nopales leaf according to the Technique for Preparing Nopales
- Dice the first five ingredients. If you prefer a less spicy burger, discard the jalapeno seeds. Set the diced vegetables aside in a medium bowl.
- In a seperate large bowl, empty the can of black beans. Mash with a fork until the beans form a thick paste. Drain the corn and add to the beans, along with the diced vegetables, egg yolks and lime juice, mixing thoroughly.
- In a food processor, reduce the bread to fine crumbs. Add gradually to the bean mixture, stirring thoroughly, until it starts to form solid clumps.
- Form the mixture into patties three to four inches in diameter, squeezing tightly.
- Cook thoroughly on a sheet of tin foil on a grill, or pan fry in a large greased skillet over medium high heat. Cook 8-10 minutes, turning once during cooking.
- Serve on hamburger or kaiser rolls, garnished with fresh tomato and avocado slices.
