Shrimp Diablo
- 2 lbs. of shrimp
- 4 Tbsp. olive oil
- 1 shallot or green onion, chopped
- 1 clove of garlic, chopped
- 1 tsp. parsley, chopped
- 1 tsp. black pepper
- 1/3 c. cooking sherry
- 2 c. brown sauce (a rich brown beef gravy can be used)
- 1 Tbsp. Worcestershire sauce
- juice of 1/2 lemon
- 1 tsp. dry mustard
- 2 Tbsp. catsup
- 4 c. rice, cooked
- First peel and devein the shrimp, then saute in olive oil until a pinkish red.
- Add shallots, garlic, black pepper and parsley.
- Cook this mixture over fast fire for 3 to 4 minutes. The recipe will then be a golden brown and have a delicate aroma. Add sherry, brown sauce, worcestershire sauce, lemon juice, dry mustard and catsup.
- Cover skillet and simmer for 15 to 20 minutes.
- Sever over a bed of long grain rice.
