Colette'S Chicken Chili
- Colette's Chicken Chili
- 2 lbs of ground chicken
- 1 can of dark red kidney beans
- 1 can of black Beans
- 1 can of white beans
- 1 small can of corn (optional)
- 1 jar of salsa
- 1 can of tomato soup
- 1 small sweet onion (optional)
- 1 small green bell pepper (optional)
- 1/2 cup poultry seasoning
- 2 tablespoons of oil
- Brown ground chicken in a large pot in oil with poultry seasoning
- Once chicken is browned add pepper and onion if using in recipe and cook until onions look clear/cooked.
- Add tomato soup and salsa to mixture
- Add all cans of beans
- Let boil for 20 minutes and then lower heat and simmer for half hour to an hour or until liquid thickens.
- Serve with Sour Cream, Shredded Cheese, and tortilla chips if desired.
- Leftovers can be saved in refrigerator for up to a week.
