Granola Cookies With Chocolate And Roasted Almonds
- 2 cups all-purpose flour
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1 cup unsalted butter, softened
- 1/2 cup granulated sugar
- 1/2 cup firmly packed light brown sugar
- 1 large egg, at room temperature
- 1 teaspoon vanilla extract
- 1 & 1/2 cups granola
- 1 cup coarsely chopped roasted almonds*
- 2/3 cup coarsely chopped chocolate
- *Spread almonds on a baking sheet and place in a 350u0b0 oven for about 15 minutes.
- Combine flour, baking soda, and salt in a small bowl. Set aside.
- In a large bowl, beat butter, granulated sugar, and brown sugar until smooth, about 2 minutes. Mix in egg and vanilla, beating well. Gradually add dry ingredients, mixing until thoroughly blended. Stir in granola, almonds, and chocolate.
- Drop dough by rounded teaspoonfuls onto ungreased cookie sheets. Leave several inches between cookies. Refrigerate for 20 minutes. Preheat oven to 350u0b0.
- Bake 12-14 minutes. Cool on baking sheets for 5 minutes. Remove cookies to wire racks to cool completely.
- Makes about 4 dozen cookies.
