Lamb Curry
- 1 pound lamb
- 2 medium onions, quartered and sliced
- 1 ounce ginger, minced
- 15 whole cloves
- 6 pods cardamom, cracked
- 1 stick cinnamon
- 4 cloves garlic, minced
- 1/4 cup vegetable oil
- 1 tablespoon salt
- 2 ounces cilantro
- turmeric
- cayenne
- 1.try spices on medium-high heat until they start to sputter
- 2.tdd one onion and fry, for a couple of minutes. Then add the ginger and minced garlic, until caramelized.
- 3.tdd lamb and turn heat up to high
- 4.trown lamb
- 5.tdd salt
- 6.teduce heat to medium-high
- 7.tdd turmeric and cayenne to taste
- 8.tover and simmer until lamb is tender
- 9.tdd second onion and cook until tender
- 10.tdd cilantro and stir in immediately prior to serving
