Frog Eye Salad

  1. Prepare acini de pepe according to package directions; drain and set aside in very large bowl.
  2. Drain pineapple, reserving 1 cup of juice.
  3. Pour juice into a small saucepan; add whipped egg and combine sugar and flour to remove lumps, then add to juice mixture.
  4. Finally, add lemon juice.
  5. Cook over medium-low heat, stirring constantly, until of pudding consistency.
  6. Pour directly over drained noodles and chill several hours.
  7. Just before serving, assemble by adding remaining ingredients.
  8. Serves 12 to 15.
