Stir-Fried Pork With Cloud Ears And Eggs
- 2 Tbs. peanut oil
- 1/2 lb. pork loin, sliced
- 1 tsp. cornstarch
- 1 Tbs. sherry
- 3 Tbs. soy sauce
- 2 slices ginger, minced
- 12 cloud ears, soaked in warm water 15 minutes, drained, rinsed, cut into small pieces
- 4 eggs, beaten lightly
- 2 Tbs. water
- 4 scallions, sliced
- Mix together cornstarch, sherry, soy sauce, ginger and marinate pork in mixture 15-30 minutes.
- Heat 1 Tbs. oil in skillet over medium high heat. Add pork and marinade. Add cloud ears. Stir-fry until pork is done, 3-4 minutes. Remove from skillet and set aside.
- Add 1 Tbs. oil to skillet and heat over medium high heat. Add beaten eggs and scramble until set. Return pork to skillet and mix well. Add water and half of scallions and stir-fry 1 minute.
- Garnish with remaining scallions. Serve with cooked rice. Serves 2-4.
