Greek Feta And Olive Spread
- 4 ounces feta cheese in a block (cut block in half lengthwise if thicker than 1/2 inch)
- 1/4 cup kalamata olives, chopped
- 1 small clove garlic, unpeeled
- 1/4 teaspoon oregano
- 1/8 teaspoon chili powder
- 2 tablespoons olive oil
- Crackers, to serve
- Line a baking dish with foil and place feta in the middle. Preheat broiler.
- In a dry skillet, toast garlic in its skin until soft and lightly browned. Peel skin and chop.
- Sprinkle feta with garlic, olives, oregano and chili powder.
- Drizzle with olive oil.
- Place under broiler until feta is softened and browned at the edges, 3-5 minutes.
- Serve with water crackers.
- Optional: Mix 1 chopped roasted red pepper to the topping before broiling.
