Stephanie'S Simple Sausage Supper
- 1lb Polska Kielbasa or Smoked Sausage - cut into small cubes
- Extra Virgin Olive Oil
- 1 Med. Onion - diced
- 2-3 cloves Garlic - minced
- 1 Green Pepper - diced
- 1 can Black beans
- 1 can diced Tomatoes (petite size are best)
- 1 cup corn (canned or frozen)
- 1 Tbsp "Emerils" Seasoning
- 1-2 small cans V8 juice or tomato sauce
- 4 C cooked rice or Orzo Pasta
- Saute onion, garlic and sausage in olive oil until sausage renders and onion and garlic are tender.
- Add Green pepper and saute a few minutes.
- Add the beans, tomatoes, corn seasoning and 1 can of V8 or tomato sauce.
- Simmer all ingredients for 20-30 minutes (can be simmered as long as 60 minutes).
- Add more V8 or tomato sauce to desired consistency.
- Serve over Rice or Orzo.
