Stephanie'S Simple Sausage Supper

  1. Saute onion, garlic and sausage in olive oil until sausage renders and onion and garlic are tender.
  2. Add Green pepper and saute a few minutes.
  3. Add the beans, tomatoes, corn seasoning and 1 can of V8 or tomato sauce.
  4. Simmer all ingredients for 20-30 minutes (can be simmered as long as 60 minutes).
  5. Add more V8 or tomato sauce to desired consistency.
  6. Serve over Rice or Orzo.
