Grilled Gewwn Bean Bundles
- 1 lb fresh green beans (prepared for boiling)
- 3 quarts water
- 1 T kosher salt
- Prosciutto sliced in thin strips
- Ground Rosemary (for seasoning)
- Garlic (for seasoning)
- 1/2 cup melted butter
- 1 cup Brown Sugar
- Bring pot of water to boil. Drop in green beans, then add 1 T salt. Cover pot and let water return to boil. This takes about two minutes. Remove cover and boil uncovered for several minutes. Cook until beans have a medium crunch. Drain immediately, run cold water over them then immerse in ice water. Leave for 5 minutes or when thoroughly chilled, then drain. Dry thoroughly and refrigerate in covered bowl until ready to use. (this can be done several hours in advance)
- Combine melted butter and brown sugar in a small bowl and mix. Pour over green beans and mix with hands. Group beans into bundles of about 5 - 8 each. Wrap each bundle around center with slice of prosciutto. (make sure it is secure)
- Sprinkle with Rosemary and Garlic (to taste) then place on medium grill (indirect). Cook for about 10-15 minutes turning once. Remove from grill and serve. This is great as an appetizer or side dish.
