Easy Pork Parmigiana
- 1 large egg
- 1 Tbsp. water
- 2 Tbsp. grated Parmesan cheese
- 1/3 c. Italian seasoned bread crumbs
- 4 (1 1/4-inch thick) slices pork tenderloin
- 2 Tbsp. vegetable oil
- 1 c. commercial spaghetti sauce
- 1/2 c. shredded Mozzarella cheese
- Combine egg and water.
- Set mixture aside.
- Combine Parmesan cheese and Italian seasoned bread crumbs and set aside.
- Place each piece of pork between two sheets of heavy-duty plastic wrap. Flatten to 1/4-inch thickness, using a meat mallet.
- Dip pork in egg mixture and dredge in crumb mixture.
- Cook pork slices in vegetable oil over medium heat until browned.
- Arrange pork slices in lightly greased 8-inch baking dish.
- Top with spaghetti sauce. Bake at 350u0b0 for 25 minutes.
- Top with shredded Mozzarella cheese. Bake for 5 more minutes.
- Serves 4.
