Lemon Squares
- Base
- 1 cup flour
- 1/2 cup butter
- 1/4 cup sugar
- Topping
- 1 large lemon
- 1 cup sugar
- 2 tablespoons flour
- 1/4 teaspoons baking powder
- 1/4 teaspoon salt
- 2 eggs,lightly beaten
- Icing sugar for dusting top
- Preheat oven to 325 F. For base combine flour,butter and sugar;mix until crumbly.Press into a greased 9-in.x9-in. baking pan.Bake 20 minutes or until lightly browned.
- For topping,zest 2 teaspoons of lemon rind,Juice 3 tablespoons lemon juice. In a medium bowl add juice and zest to the remaining ingredients and mix until well blended.
- Pour topping over base.Bake 20-25 minutes or until nearly set.Cool in pan on a wire rack.Sprinkle with icing sugar and cut into squares.Store in refrigerator.
