Pacific Tamato Basil Pasta Salad
- 2 Tbsp. caper
- 3 ripe tomatoes, chopped finely
- 3 green onions, thinly sliced
- 1 clove garlic, minced
- 8 to 10 fresh basil leaves, shredded
- 5 Tbsp. extra virgin olive oil
- 1 Tbsp. fresh lemon juice
- salt and pepper to taste
- 1/2 lb. spiral shape pasta or other shapes
- shredded Parmesan cheese
- Rinse capers under cold running water and pat dry with paper towels.
- Place in large salad bowl with the tomatoes, green onion, garlic and basil.
- Combine lemon juice, salt and pepper.
- Add oil and stir until blended.
- Fill large pan with salted water and bring to boil.
- Add pasta and boil until cooked but still firm.
- Drain and rinse under cold running water.
- Add to salad bowl.
- Pour the dressing over salad.
- Toss well.
- Serve with Parmesan cheese, if desired.
