Spaghetti Sauce
- 1/2 cup high quality olive oil
- 6 cups chopped onion
- 8 cloves garlic
- 2 cups chopped pepper (mix hot & sweet)
- 16 cups crushed fresh tomatoes (use blender)
- 1/2 cup chopped fresh basil
- 1/2 cup chopped fresh rosemary
- 1/4 cup chopped fresh oregano
- 1/4 cup balsamic vinegar
- 1/4 cup rice vinegar
- 2 tablespoons salt
- 2 teaspoons black pepper
- 2 teaspoons cumin
- 1 can tomato paste
- 1 teaspoon xanthan gum (optional)
- Heat oil in a large sauce pot over medium heat. Add onion, garlic, and peppers, saute until onion is beginning to be translucent. Add the rest of the ingredients, increase heat and bring to a gentle boil. Reduce heat and simmer, stirring often, until sauce reaches desired consistency. Stir in xanthan gum. Process as desired.
