Lasagne Florentine
- 1 (10 oz.) pkg. frozen chopped spinach
- 2 Tbsp. oil
- 3 garlic cloves
- salt or soy sauce
- 1 medium onion, chopped
- 2 large zucchini, thinly sliced
- 1 large yellow, thinly sliced
- 1/2 lb. lasagne noodles
- 1 lb. Ricotta cheese
- 1/4 c. fresh chopped basil or 1/2 tsp. dried
- 8 oz. Mozzarella, grated
- 1egg
- 1 c. plain yogurt
- grated Parmesan or Romano cheese
- Set water for lasagne to boil.
- Preheat oven to 375u0b0.
- Heat 1 tablespoon oil in large skillet and saute garlic.
- Add thawed spinach and let steam over low heat, covered, until limp.
- Add sprinkle of salt or soy sauce if desired.
- Set aside.
- Add remaining tablespoon oil in large skillet and saute onion, add squash and stir until slightly cooked.
